My favorite cookies are snowball cookies! These cookies are buttery, melt-in-your-mouth, and the perfect Christmas cookie for cookie swaps and your holiday cookie spread! These snowball cookies have toasted pecans for extra flavor. These take only a few ingredients and are SO EASY!
1 cup unsalted butter
1/2 cup powdered sugar
pinch of sea salt
1 teaspoon pure vanilla extract
2 1/4 cup cake flour OR 2 Cups All purpose flour
3/4 cup of finely chopped pecans, toasted
1/2 cup powdered sugar for rolling
The first step to making these snowball cookies is to preheat your oven to 350 degrees and toast your chopped pecans.
Lay the pecans on a single layer on a baking sheet. Toast pecans for about 5 minutes, until fragrant and warm.
Allow them to cool then finely chop them. Note that you can use a food processor, but don’t grind them too fine! You want some nut chunks in there!
Next, cream butter and sugar for a couple of minutes. Add vanilla extract and pinch of sea salt.
Then add flour and combine.
Mix in the pecans.
Form balls, put on baking sheet, and bake for 15 minutes.
Cool only slightly! While warm, roll in powdered sugar and put on cooling rack. Then when they are cool, roll them in powdered sugar again.
