Snowball cookies, Russian Tea Cakes, Mexican Wedding Cakes, there are so many names for this cookie, but it all means the same delicious Christmas cookie! Snowballs are one of my favorite Christmas cookie, and when my husband had to go gluten free he could never have them until now. I found a great gluten free flour substitute, without adjusting the recipe and the cookies taste exactly the same! You can cook these the traditional way, I will post that recipe below, but I put my own spin on this recipe that you will see in the video. That recipe will also be below. I hope you enjoy these delicious snowball cookies like me and my husband do!

GLUTEN FREE SNOWBALL COOKIE RECIPE:

1 cup Butter
1/2 cup powdered sugar
1 tsp vanilla
2 1/4 Bob Red Mills Gluten Free Flour 1 for 1 flour ***
3/4 cup finely chopped nuts
1/4 tsp salt
Powered sugar

Instructions:
Heat oven to 400ºF.

Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.

Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.

Bake 15-20 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.

Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.

ORGINAL SNOWBALL COOKIE RECIPE:

Russian Tea Cakes by Betty Crocker: I love this recipe, every time I make it I get a ton of compliments!

3/4 cup finely chopped nuts
1/4 tsp salt
Powered sugar

Instructions:
Heat oven to 400ºF.

Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.

Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.

Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
