Let me show you how to make this eggnog cupcakes recipe. These easy cupcakes are made with egg-whites, resulting in an airy and whit-ish sponge. The Espresso Buttercream is to die for!! You can make it with instant espresso powder or, as I did, the real deal 😉 And a sprinkle of cinnamon (or cocoa powder) makes it the perfect companion for your coffee. This eggnog cupcake recipe is the perfect Christmas dessert idea, full of holiday flavors.

INGREDIENTS

CUPCAKES
6 tbsp (84g), unsalted butter, room temperature
3/4 cups (155g) sugar
1/4 cup (57g) sour cream
2 tsp vanilla extract
3 large egg whites, room temperature
1 1/4 cups (163g) all purpose flour
2 tsp baking powder
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup (90ml) eggnog
2 tbsp (30ml) water

ESPRESSO FROSTING
1 cup (224g) unsalted butter
3-4 cups powdered sugar
2-3 tbsp eggnog
1 tsp vainilla extract
1/4 tsp salt
1 espresso shot (single)
–OR–
2 tbsp (30ml) hot water
1 tbsp powdered instant espresso coffee
